Although many believe peaches are native to the southern United States, the peach tree actually originated in China. Known in Chinese stories as the "Tree of the Fairy Fruit", the peach tree was a symbol of immortality in ancient China, because according to legend, the Peach Tree of the Gods bloomed only once every 3000 years, to produce the Fruit of Eternal Life. Even today, the Chinese consider the peach a symbol of longevity, and decorate their homes with peach and peach blossom designs for birthdays and anniversaries. The peach tree was spread to the west by Spaniards, who brought it to Mexico, Brazil, the West Indies, and California. Early explorers planted many groves of peach trees all up and down the eastern seaboard of the United States, and Native Americans then planted them from Florida all the way up to the Great Lakes. Now, even with their very limited growing season, peaches are the third most popular fruit in US after apples and oranges. Culinarily Speaking Buy peaches that are firm and blemish-free, and yield to gentle pressure. Above all, a peach should smell like a peach, so do the sniff test to be sure. They should have some color (a good complexion) and no visible green (which indicates a peach was picked too early and will not ripen properly). Fuzzy peaches are an indicator they have not been sprayed, although these days it's possible (and, of course, highly desirable) to find organic peaches. Peaches will ripen off the tree, and this can happen fast, once they are in your kitchen. Refrigerate upon first sign of ripeness (softness or fragrance) and eat as soon as possible.
