Do I love these! They are so satisfying and good for you, you can happily incorporate them into your busy lifestyle as a grabbed-breakfast-on-the-run, or as an afternoon pick-me-up snack. I keep them at my desk and munch on them whenever I feel my blood sugar level dropping. Low in carbohydrates and high in protein and good fat, they spruce me right up again. It never fails! The only drawback: They may become habit-forming.
NOTE: The nonstick spray is very convenient to keep the tahini and honey from sticking to the measuring implements. It makes everything easier and faster, including cleanup.
1 cup sesame tahini
2 tablespoons light honey
A scant 1/2 teaspoon salt
2/3 cup currants
2/3 cup minced or ground pistachios, lightly toasted
1/3 cup sesame seeds
Make 1-inch balls and roll each in the sesame seeds until thoroughly coated. Store the nuggets in a sealed plastic bag in the refrigerator or freezer. Theoretically, they will keep a very long time, but this is hypothetical, since my family and I always finish them off within the week.
